Shawarma


Ingredients

1-1.5 kg Beef with a bit of fat
1 Small cup Arabic coffee cup of vinegar
2 Cloves of garlic
Half a lemon
All spice
Black pepper
Salt
2 seeds of 'hail'

Directions:

1 - Slice the meat thin but not too small in size
2 - Add little bit of salt
3 - Add little more salt, the two garlic, then proceed to crush them until the garlic is meshed really good
4 - Add lemon juice the vinegar, all spice, shawarma spice, black pepper, with the garlic/salt mixture and mix very well in a separate bowl.
5 - Pour the sauce on the meat then mix well
6 - Cover the meat well and allow to marinate for 8 hours
7 - Cover the meat well in a pot and cook for approx. 45 minutes.
8 - After 30 minutes keep checking to make sure they are not being overcooked.
9 - Keep the heat on a little below medium.
10 - do not drain sauce before cooking

Preparation of Shawarma sandwich:

1 – Taratour sauce (Tahini, Garlic, Half lemon and Yogurt mixed in moderate amounts)
2 - Parsley and onions (the onions should be sliced and mixed with 'sumac')
3 - Tomatoes
4 - pickles

Finally place the meat, the taratour sauce, the parsley, and onions on pita bread and roll it into a delicious sandwich; or you can eat it on a plate.
