Babaghannouj
(Eggplant with Tahini)
Ingredients
Eggplant
Lemon juice
Sesame oil (Tahini)
Garlic, crushed
Water
Salt
- Broil the eggplants until soft and well cooked.
- Peel them and mince them with a bit of garlic and salt.
- Add sesame oil (Tahini) and alternate with lemon juice until the consistency is like sour cream.
Garnish with mint leaves, tomato and green onion pieces.
